Are you only looking for thermocouple wire, or do you have other sensors?
If you want Tefzel insulated wire for other sensors, Aircraft Spruce
<http://www.aircraftspruce.com/> sells it.

If you're just doing thermocouple wiring, Omega sells lots of different
insulation options.

If for some reason you want to wrap thermocouple wire around something
really hot (like an exhaust manifold) you could buy glass fiber insulation.

Why are you using thermocouples?  Have you considered using a thermistor
