When you stack a tower, you build the tower to the first set of guys,
guy it, then stack the next section, guy it, stack the next section, and
guy it. Taking down a tower, you strip it of antennas and coax, then you
unguy the top section and remove the top section, and so on until you're
at the next set of guys.
That being said, it may be useful to find a way to rig a plumb-bob to
the pole, since you can kinda determine which way is straight, but when
you put guy stress on it, it may attempt to buckle:

You'll recognize the shapes. Don't worry too much about it, fiberglass
is more flexible than steel, so things can happen. But your guys will
take the stress of the windload and keep the mast mostly center.
Also remember that you bought fiberglass and it's RF transparent... you
can make a sleeve dipole and hang it inside suspended from a brass hook
installed in a pipe cap.
